West Coast Culinary Symposium (West)

Friday February 16th, 2018 to Sunday February 18th, 2018
Fairfax, California

Do you like to eat? I have it on good authority that people in the Middle Ages did too!
Whether you are a fresh new cook or a well seasoned chef we have classes for you. Come, share, learn and eat! This is a great opportunity that only comes to the West once every three years.

We have a great selection of classes for you to choose from on all aspects of Medieval, Renaissance, and Early Modern food, cookery, feast kitchen management, culinary literature, tableware, and etiquette. We have teachers coming in from several kingdoms to teach so this is a unique opportunity to learn from somebody new that only happens once every three years.

Teachers need students as much as cooks need eaters. Please consider attending and taking classes — or just hang out, it's a lovely site. The event costs include the Girl Scout cabins with electricity, showers, and meals for the weekend. This means there is no set up or break down of encampments, great food, and nice hot showers! Come and learn about — and eat — yummy period foods.

Event Registration
Pre-register early! Those who pre-register will get priority in registering for classes before the event.

Meal Plan:
The meal plan for this year’s West Coast Culinary Symposium will use recipes from the 13th century Syrian cookbook, Kitab Wusla ila'l-habib fi wasf al-tayyibat wa'l-tib. It has recently been published in English as Scents and Flavors, edited and translated by Charles Perry. To quote Perry, “the greater part of the pleasure of this life which is namely the consumption of food and drink” and Scents and Flavors “invites us to savor the inventive cuisine that elevates simple ingredients by combining the sundry aromas of herbs, spices, fruits, and flower essences.”

The fabulous Masters of the Culinary Arts, Anna de Serra and Francisco Hinojosa, will use its recipes for both breakfast Saturday and Sunday, and for Saturday lunch and dinner. A detailed menu will be posted soon.

Event Memorabilia
A limited number of Tenth Anniversary machine embroidered period-style aprons are available for $60. Due to the small amount of narrow linen there is only a limited number of aprons available (18 total). If you want one please email the autocrat at donata@westkingdom.org
